Carrot Cheese Ball Recipe

Ingredients:

  • 1-1/2 c. shredded carrots
  • 1 8-oz. pkg. Neufchatel cheese; softened
  • 2 c. 8-oz. shredded low-fat cheddar cheese
  • 2 lg. cloves garlic; minced
  • 1 tsp. Worcestershire sauce
  • 1/2 tsp. Tabasco sauce
  • 3 to 4 tbsp. fresh parsley; chopped

    Instructions:

  • To prepare grated carrots, press them between two paper towels to get rid of extra moisture.
  • In a large bowl, combine the first 5 ingredients. Mix well.
  • Chill cheese mixture in refrigerator about 30 minutes to harden.
  • Shape cheese mixture into ball.
  • Roll in fresh parsley.
