Grilled Honeydew Melon and Cantaloupe Kabobs Recipe

Ingredients:

  • skewers
  • 1/2 honeydew; chunked 2 inch cubes
  • 1/2 cantaloupe; chunked 2 inch cubes
  • 1/4 cup lemon juice
  • 2 tablespoons sugar or Splenda
  • 1 teaspoon ginger, minced or dry

Instructions:

  1. Stir together the last three ingredients to make your marinate mixture.
  2. Coat all melon and cantaloupe chunks and let them sit for no longer then ten minutes.
  3. Thread the chunks on the skewers, alternating between cantaloupe and honeydew. Grill high heat for 30-seconds for each quarter turn. They are finished when melon is soft.
  4. Serve with whipped cream or ice cream.
