Honey Mint BBQ Chicken Recipe

Ingredients:

  • 1/4 cup white vinegar
  • 1/4 cup olive oil
  • 1 4-5 pound chicken, cut into parts
  • salt
  • fresh ground black pepper
  • 1/2 cup honey
  • 3 tbsp. water
  • 1/2 cup chopped fresh mint

    Instructions:

    1. In a small bowl, mix vinegar and olive oil. Turn chicken so that all pieces are coated with the simple marinade. Let marinate for 30 minutes to an hour.
    2. In a large bowl, pour the contents of the small bowl over the chicken pieces. Make sure each piece is well marinated and let marinate for about an hour.
    3. In a small bowl, combine honey, mint, and just enough water for basting consistency.
    4. Preheat grill at medium high heat. Place chicken pieces on the hot grill, skin side up. Sprinkle with salt and pepper. Grill for 30-40 minutes, covered, turning every 7-8 minutes. During final 5-10 minutes of grilling, baste all sides of the chicken pieces with the honey mint mixture. The chicken is done when the juices are clear, not pink.
