Easy Vegetable Kabobs Recipe

Ingredients:

  • 1 cup Italian salad dressing
  • 1 tablespoon minced fresh parsley
  • 1 teaspoon dried basil
  • 2 medium yellow squash, cut into 1 inch pieces
  • 8 small boiling onions, peeled
  • 8 cherry tomatoes
  • 8 medium fresh mushrooms
  • wooden skewers soaked in water for 30 minutes

Instructions:

  1. Heat grill to medium-high heat.
  2. Whisk together marinate ingredients: dressing, parsley and basil. Marinate for 30 minutes to one hour. Use some of the marinate for basting.
  3. Skewer vegetables alternately and oil the grill.
  4. Grill covered over medium-high heat for 15 minutes or until vegetables are tender. Baste and turn frequently
