CopyCat Olive Garden's Recipes
Olive Garden's Zuppa Toscana Recipe

Ingredients:

  • 1 lb ground Italian sausage
  • 1 1/2 tsp crushed red peppers
  • 1 large diced white onion
  • 4 Tbsp bacon pieces
  • 2 tsp garlic puree
  • 10 cups water
  • 5 cubes of chicken bouillon
  • 1 cup heavy cream
  • 3 large sliced Russet potatoes
  • 1/4 of a bunch of kale

    Instructions:

  • In a stockpot, saute sausage and crushed red pepper. Drain and keep cool while you work on the rest of the soup.
  • In the stockpot sauté bacon, onions and garlic until the onions are soft.
  • Combine chicken bouillon and water. Add to the stockpot. Bring to a boil.
  • Reduce heat add potatoes and cook until soft.
  • Just before serving, add pasta. Serve when pasta is heated through.
  • Add heavy cream and sausage. Cook until thoroughly heated.
  • Add kale, heat and then serve.

    Makes: 1 gallon.
