Crockpot Vegetable Recipes

Crock Pot Mexican Style Spinach Recipe

Ingredients:

  • 3 10 ounce packages frozen chopped spinach
  • 1 onion; chopped
  • 1 clove garlic; minced
  • 1 tablespoon canola oil
  • 2 Anaheim chilies; toasted, peeled and minced
  • 3 fresh tomatillos; toasted, husks removed, chopped
  • 6 tablespoons fat free sour cream

    Instructions:

    1. In a skillet, saute onion and garlic in oil until onion is soft, not browned. Stir in chilies and tomatillos and cook for 5 minutes.
    2. Add mixture to crock pot.
    3. Cover and cook on low for 4 - 6 hours.
    4. Serve dotted with sour cream.


    Yield 6 servings.
