Crockpot Vegetable RecipesCrock Pot Potato Stuffed Cabbage Recipe
Ingredients:
1 head cabbage; parboiled, leaves separated
5 pounds potatoes; peeled
2 onions
1/2 cup raw rice
1 teaspoon dill; dried
1/4 teaspoon ground black pepper
2 egg whites
1 28 ounce can tomatoes
1 apple; peeled and sliced
1/4 teaspoon ginger; dried ground
Instructions:
- In a bowl grate potatoes, small inner leaves of cabbage and one of the onions, mix well.
- Stir in rice, dill and black pepper.
- In another bowl, beat egg whites until frothy and add to potato mixture.
- Set aside two or three of the largest cabbage leaves. Fill each remaining cabbage leaves with approximately 2 tablespoons of the potato mixture.
- Fold up bottom of the cabbage leaf, then fold in the sides and roll up. Secure with toothpick.
- Line the bottom of a lightly greased crockpot with reserved leaves. Slice second onion and layer on top of cabbage.
- Add tomatoes, apple, and ginger. Place rolled stuffed cabbages on the layers.
- Cook on low for 4 - 5 hours.
Yield 8 servings.
