Crockpot Recipes

Cauliflower and Cheese Soup

Ingredients:

  • 1 medium head of cauliflower; separated into flowerettes
  • 1 medium onion; chopped
  • 1 carrot; chopped
  • 1/2 cup celery; chopped
  • 4 cups chicken stock
  • 1/2 tsp. Worcestershire sauce
  • 1 cup Cheddar cheese; grated
  • salt and pepper
  • 2 cups light cream

    Instructions:

    1. Place the cauliflower, onion, carrot and celery in the crock pot.
    2. Pour in chicken broth.
    3. Cover and cook on low for 6-8 hours.
    4. Puree in blender and return mixture to the crock pot.
    5. Whisk in cream, Worcestershire and cheese. Heat on high or low, until warm.
    6. Add salt and pepper to taste.
