Crockpot RecipesCauliflower and Cheese Soup
Ingredients:
1 medium head of cauliflower; separated into flowerettes
1 medium onion; chopped
1 carrot; chopped
1/2 cup celery; chopped
4 cups chicken stock
1/2 tsp. Worcestershire sauce
1 cup Cheddar cheese; grated
salt and pepper
2 cups light cream
Instructions:
- Place the cauliflower, onion, carrot and celery in the crock pot.
- Pour in chicken broth.
- Cover and cook on low for 6-8 hours.
- Puree in blender and return mixture to the crock pot.
- Whisk in cream, Worcestershire and cheese. Heat on high or low, until warm.
- Add salt and pepper to taste.
