Crock Pot RecipesBlack Beans and Rice Soup
Ingredients:
1 medium onion; chopped
3 carrots; thinly sliced
2 stalks celery; thinly sliced
4 garlic cloves; minced
1/2 teaspoon ground cumin
1 1/2 teaspoons dried basil
1/2 teaspoon chili powder
1/2 teaspoon dried oregano
1/2 teaspoon Tabasco sauce
2 16-oz cans black beans; drained and rinsed
1 141/2-oz can crushed tomatoes
2 14 1/2-oz cans broth
1 1/2 cups brown rice; cooked
Instructions:
- Add all soup ingredients except rice to the crock pot.
- Cover and cook on low for 8 - 10 hours.
- Add cooked brown rice just before serving.
