Ingredients:
Dressing:
1/2 cup honey
1/2 teaspoon vanilla extract
1 tablespoon finely shredded mint
Salad:
3 cups diced melon (canteloupe, honeydew, or mixed)
1 1/2 cup diced peaches
1 1/2 cup diced pineapple
1 cup sliced strawberries
2/3 cup blueberries
Instructions:
Combine the honey and vanilla in a small saucepan and bring to a simmer, then lower heat and continue to simmer for about 3 minutes. Do not overcook. Allow the honey to cool for about 5-8 minutes, then stir in the mint.
For the salad, combine all the fruit in a large bowl and mix gently. Carefully fold the honey dressing into the fruit mixture. Chill at least 2 hours, then stir before serving.
