Black Bean Salad Recipe

Ingredients:

  • 2 cans 15 oz black beans; rinsed and drained
  • 6 scallions; thinly sliced
  • 1 cup cherry tomatoes;quartered
  • 1 small yellow bell pepper; seeded and diced
  • 2 jalapeno peppers; seeded and chopped
  • 1/4 cup cilantro; finely chopped
  • 1/4 cup sherry vinegar
  • 2 tablespoons olive oil
  • 1 teaspoon dijon mustard
  • 1 teaspoon cumin; ground
  • 1/2 teaspoon oregano; dried
  • salt and pepper to taste

Instructions:

  1. In a large bowl, toss all ingredients together.
  2. Chill for at least two hours before serving.
