Salad Recipes Black Bean Salad Recipe
Ingredients:
- 2 cans 15 oz black beans; rinsed and drained
- 6 scallions; thinly sliced
- 1 cup cherry tomatoes;quartered
- 1 small yellow bell pepper; seeded and diced
- 2 jalapeno peppers; seeded and chopped
- 1/4 cup cilantro; finely chopped
- 1/4 cup sherry vinegar
- 2 tablespoons olive oil
- 1 teaspoon dijon mustard
- 1 teaspoon cumin; ground
- 1/2 teaspoon oregano; dried
- salt and pepper to taste
Instructions:
- In a large bowl, toss all ingredients together.
- Chill for at least two hours before serving.
